芒果奶油芝士派 Mango Cream Cheese Pie

买了派模很久很久。。。终于派上用场了。



芒果奶油芝士派

闲逛时看见派模超便宜,就随手 Lap 了回来,可是就是没有做过派。今天,终于让我的派模登场了,带来了好吃的芒果奶油芝士派。

这个芒果芝士派,真的好好吃,冰冰凉凉的,芒果和奶油芝士原来也是可以很搭配的,好吃,推荐。

饼皮食谱参考 Alex Goh的《香酥脆馅饼》,馅料食谱参考这里,略有少许更改。

饼皮 (Pastry)
材料A (Ingredients A)
70g        糖粉 (70g icing sugar)
150g      牛油 (150g butter)

材料B (Ingredients B)
1个        鸡蛋 (1 egg)

材料C (Ingredients C)
260g     面粉 (260g plain flour)
1汤匙    奶粉-我省略 (1 tbsp milk powder - I omitted)

步骤 (Steps)
把材料A搅拌均匀,加入B,搅拌均匀,筛入C,搅拌均匀,盖上保鲜膜放入冰箱冷藏半小时至硬,然后放在两张烘焙纸之间,杆平至大约 0.5cm 厚度,铺入排摸,压平,然后用叉在表面刺洞,送入预热烤箱,放中层170度烤22分钟至金黄,取出后待凉,备用。
[ 备注:此食谱一共可做两个派皮。] 
Mix ingredients A till well combined, add in B and mix till smooth, sieve in C  and mix well, cover with cling wrap, refrigerated for at least half an hour to firm the dough, place the dough in between 2 sheets of baking paper, roll until about 0.5 cm thickness, transfer to the pie mould, using a fork, prick some holes to prevent the crust from blistering while baking, put in preheated oven, place at middle rack, bake at 170 degree Celsius for 22 minutes or until golden brown, remove from oven and leave cool.
[Remarks:This recipe is enough to make 2 pies.]

馅料 (Fillings)
材料D (Ingredients D)
1汤匙        吉利丁粉 (1 tbsp gelatin powder)
3汤匙        热水 (3 tbsp hot water)

材料E (Ingredients E)
100g         奶油芝士 (100g cream cheese)
20g           糖粉 (20g icing sugar)

材料F (Ingredients F)
175g         芒果泥 (175g mango puree)
2汤匙        细砂糖 - 可根据芒果甜度增减 (2 tbsp caster sugar - adjust according to the mango sweetness)

步骤 (Steps)
1. 把材料D融化,待凉,备用。
    Melt ingredients D, leave to cool, set aside.


2. 把材料E打发,加入材料F, 搅拌均匀,然后把(1)倒入,搅拌均匀后,倒入派皮里,然
    后放入冰箱至少2个小时后才切块享用。
    Cream E until light and fluffy, add in F, mix well, then pour (1), mix until well combine, 
    pour mixture into the pastry, chill the mango cream cheese pie for at least 2 hours before 
    serving.
    [ 备注:此馅料足够填满1个派和2个塔。]
    [Remarks:This recipe is enough to make 1 pie and 2 tarts.]

装饰 (Decoration)
适量        樱桃 (Some cherry)
适量        草莓 (Some strawberry)

步骤 (Steps)
用樱桃或草莓装饰。
Use cherry or strawberry to decorate the pie and tart.
