长颈鹿花纹土司 Giraffe Patches Bread Loaf

那天和 Aunty Young 谈天,讲起长颈鹿土司,今天终于让长颈鹿来到我家了。


长颈鹿花纹土司

这个土司又好吃又好玩,食谱取自 Sonia,改自吴宝春金牌土司。只是我分面团时没有秤230g 而是秤了300g,所以不是很像长颈鹿的花纹,看来还要多多练习。

材料A (Ingredients A)
375g        高筋面粉 (375g high protein flour)
35g          细砂糖 (35g caster sugar)
3g            即溶酵母 (3g instant yeast)
1/2茶匙    盐 (1/2 tsp salt)
250g        冷牛奶 (250g cold milk)

材料B (Ingredients B)

20g         牛油 (20g butter)

材料C (Ingredients C)

20g         可可粉 (20g cocoa powder)
15g         牛奶 (15g milk)


步骤 (Steps)
1. Kenwood 面包机: 把材料A放入面包机,启动功能8
    Kenwood bread maker: Put all ingredients A into the bread maker, turn on function no. 8.

2. 当面包机启动5分钟后,会休息5分钟,这时加入材料B
    The bread maker will rest after 5 minutes of mixing, then add in ingredients B after the
     first stop.

3. 当面包机再次启动后,会操作20分钟,过后取出一半面团放在另一个盆里,盖上保鲜膜,
    让面团发酵至少两倍大。
    When the bread maker start operate again, it will mix the ingredients for another 20 
    minutes, remove half of the dough once the machine stop kneading, cover the dough 
    with cling wrap in a big bowl and let it double the size.

4. 把材料C加入另外一半还留在面包机里的面团,重新启动功能8,直到所有的面团均匀的变
    成了可可面团,取出放入一个盆里,同样的让它发酵至少2倍大以上。
    Add ingredients C into the remaining dough left in the bread maker, restart function 8 until
    the dough is completely turn to a chocolate dough.

5. 排气,把每份面团分成4份。  
    Punch down the dough to expel air, divide the two types of dough into 4 portions, 
    respectively.

6. 把可可面团搓成大概 20cm 长的圆筒状,原面团擀成大概25cm x 8cm。
    Roll the cocoa dough into 20cm long cylinder shape, flatten the original dough into 
    about 25cm x 8 cm wide.

7. 把可可面团放在原面团中央,用原面团包住可可面团,搓成大概 25cm 的圆筒状,过后
    把面团从中间切半,重复步骤(6)和(7),直到完成所有面团。
    Put the cocoa dough in the middle of the original dough, wrap the cocoa dough with the 
    original dough, then roll into about 25 cm long cylinder shape, then cut the dough at the 
    middle to divide it into equal portion, repeat step (6) and (7) for the rest of the dough.

8. 把3个面团铺在面包烤盘中央,叠2个面团在上面,过后在叠3个面团在上面,盖上盖,让面
    团发酵至少9分满。
    Place 3 dough at the bottom of the bread tin, then stack 2 dough above and finally stack
    the remaining 3 dough on top, cover with lid, let it proof until about 90% full.

9. 放入预热烤箱,烤180度40分钟至熟。
    Bake in preheated oven for 180 degree celsius for about 40 minutes or until cooked.

10. 面包出炉后,立刻脱模,待凉后才切。
    Remove from the tin immediately once bake, leave to cool then only slice the bread.










刚切开时,傻眼了。。。怎么这样???


幸好里面的还OK一些,有点像长颈鹿
